Comme je l\u2019ai d\u00e9j\u00e0 mentionn\u00e9 sur le blog, c\u2019est surprenant \u00e0 quel point <strong>la past\u00e8que se combine bien avec des pr\u00e9parations sal\u00e9es<\/strong>. J\u2019aime bien. J\u2019aime bien passer le gaspacho \u00e0 travers une passoire en inox pour enlever tous les \u00e9ventuels d\u00e9bris de peaux et de graines. \u00c7a lui donne une texture tr\u00e8s fine. Puis je le remets dans le bol et j\u2019ajoute l\u2019huile en filet, peu \u00e0 peu en m\u00eame temps que l\u2019on mixe. \u00c7a sert \u00e0 <strong>\u00e9mulsionner<\/strong> le gaspacho et la texture en plus d\u2019\u00eatre fine sera bien onctueuse. Vous verrez que \u00e7a d\u00e9veloppe bien les saveurs. N\u00e9anmoins, dans ce cas, on ajoute la past\u00e8que \u00e0 la fin, car si on la fait mac\u00e9rer, elle va s\u00e9cher et j\u2019aime moins. Ah\u00a0!
