De cette fa\u00e7on, elles lib\u00e8rent le sable qu\u2019elles ont \u00e0 l\u2019int\u00e9rieur. Ensuite, retirer les coques soigneusement pour que le sable reste au fond. Dans un faitout, mettre \u00e0 cuire les coques avec un demi-verre de vin blanc. Placer le couvercle et faire cuire \u00e0 feu moyen vif environ 4 ou 5 minutes, jusqu\u2019\u00e0 ce qu\u2019elles soient ouvertes. \u00c9goutter et r\u00e9server le bouillon. Retirer les chairs des coques.<\/li>\n<li itemprop=\"recipeInstructions\"><strong>Le fumet.<\/strong> Compl\u00e9ter avec du fumet de poisson jusqu\u2019\u00e0 1 litre l\u2019eau de cuisson rendue par les coques et faire chauffer \u00e0 feux doux sans faire bouillir. Assaisonner le fumet selon votre go\u00fbt.<\/li>\n<li itemprop=\"recipeInstructions\"><strong>Les \u00e9chalotes.<\/strong> \u00c9plucher les \u00e9chalotes et les ciseler finement. \u00c9plucher \u00e9galement les gousses d\u2019ail, retirer leur germe et ciseler finement. Dans une po\u00eale large \u00e0 feu moyen, faire chauffer de 3 \u00e0 4 cuiller\u00e9es \u00e0 soupe d\u2019huile d\u2019olive. Ajouter l\u2019\u00e9chalote cisel\u00e9e et faire revenir de 3 \u00e0 4 minutes en remuant de temps en temps, mais sans coloration. Incorporer l\u2019ail, bien m\u00e9langer et faire revenir 2 \u00e0 3 minutes de plus.<\/li>\n<li itemprop=\"recipeInstructions\"><strong>Le riz.<\/strong> Ajouter maintenant le riz \u00e0 risotto dans la po\u00eale. Bien m\u00e9langer et cuire jusqu\u2019\u00e0 ce que les grains deviennent transparents. Augmenter \u00e0 feu \u00e0 moyen \u00e9lev\u00e9. Verser l\u2019autre moiti\u00e9 de vin blanc, remuer et attendre que l\u2019alcool s\u2019\u00e9vapore 2 \u00e0 3 minutes. Maintenant, ajoutez 1 ou 2 louches de fumet de poisson chaud et remuer pendant que le riz va l\u2019absorber. Continuer \u00e0 ajouter du fumet progressivement comme pr\u00e9c\u00e9demment jusqu\u2019\u00e0 ce que le riz soit cuit. V\u00e9rifier la cuisson de temps en temps (sur certains paquets de riz, il est indiqu\u00e9 le temps de cuisson).<\/li>\n<li itemprop=\"recipeInstructions\"><strong>Finition.<\/strong> Quand le riz est cuit, ajoutez les coques que nous avions r\u00e9serv\u00e9es, un peu de persil hach\u00e9 (selon votre go\u00fbt), le beurre et \u00e9ventuellement le parmesan r\u00e2p\u00e9. Dans ce cas, on n\u2019utilise pas le jus. Utilisez uniquement du fumet de poisson.<\/li>\n<li>Si vous voulez pr\u00e9parer un <strong>fumet de poisson maison<\/strong>, mettre dans une casserole des ar\u00eates et des t\u00eates de poisson (de merlu, par exemple) ainsi que 1 carotte en tranches, 1 oignon coup\u00e9 en deux, \u00bd poireau, 5 ou 6 grains de poivre et 1 bouquet garni. Couvrir d\u2019eau et faire chauffer. Laissez cuire environ 20 minutes \u00e0 feu moyen.
