Tapas espagnoles."},"content":{"rendered":"<p>Ce billet d\u00e9crit la recette pour pr\u00e9parer des <strong>\u0153ufs cass\u00e9s<\/strong>, en espagnol \u00ab\u00a0<em>huevos rotos\u00a0\u00bb<\/em>, l&rsquo;une des tapas les plus typiques en Espagne, des frites, des \u0153uf au plat, le tout m\u00e9lang\u00e9. Le secret : le go\u00fbt des frites enrob\u00e9s du jaune d\u2019\u0153uf. Le plat doit son nom au fait que l&rsquo;on casse les \u0153ufs sur les frites au moment de servir. C&rsquo;est l&rsquo;une de mes tapas pr\u00e9f\u00e9r\u00e9es et chaque fois que je rentre en Espagne,\u00a0je vais\u00a0dans le restaurant \u00e0 tapas o\u00f9\u00a0ils fonts mes\u00a0\u0153ufs cass\u00e9s favoris. Cette recette est une approximation\u00a0\u00e0 la version de ce restaurant propos\u00e9e par l&rsquo;un de mes amis qui m&rsquo;accompagne habituellement\u00a0d\u00eener l\u00e0-bas. On cherche plut\u00f4t des frites moelleuses que croustillantes, c&rsquo;est pour \u00e7a que l&rsquo;huile ne doit pas \u00eatre trop chaude, pour \u00e9viter que les frites ne cuisent\u00a0pas trop \u00e0 l&rsquo;int\u00e9rieur.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9goutter les frites dans\u00a0une grande passoire en inox ou sur du papier absorbent.<\/li>\n<li itemprop=\"recipeInstructions\">Assaisonner avec du sel et\u00a0saupoudrer de persil frais hach\u00e9. M\u00e9langer doucement.<\/li>\n<li itemprop=\"recipeInstructions\">Faire des \u0153ufs au\u00a0plat, en faisant attention de ne pas trop cuire les jaunes.<\/li>\n<li itemprop=\"recipeInstructions\">Enlever l&rsquo;exc\u00e8s d&rsquo;huile des \u0153ufs au plat et les placer\u00a0sur les frites.<\/li>\n<li itemprop=\"recipeInstructions\">Saupoudrer de paprika doux selon\u00a0votre\u00a0go\u00fbt.<\/li>\n<li itemprop=\"recipeInstructions\">C&rsquo;est pr\u00eat ! Servir tout de suite. \u00c0 table, rompre les \u0153ufs en morceaux a l&rsquo;aide d&rsquo;une fourchette et une cuill\u00e8re. M\u00e9langer doucement afin de bien impr\u00e9gner les frites avec les jaunes.
