On proc\u00e8de comme suit:<\/li>\n<li itemprop=\"recipeInstructions\">Couper la t\u00eate derri\u00e8re les branchies avec un couteau. Enlever \u00e9galement les nageoires et la queue.<\/li>\n<li itemprop=\"recipeInstructions\">Ouvrir l&rsquo;estomac ins\u00e9rant le couteau \u00e0 partir de l\u2019orifice anal et vider l&rsquo;int\u00e9rieur. Faire attention \u00e0 bien enlever la pellicule noire.<\/li>\n<li itemprop=\"recipeInstructions\">Rincer l&rsquo;int\u00e9rieur avec de l\u2019eau du robinet.<\/li>\n<li itemprop=\"recipeInstructions\">Faire une incision dans le dos.<\/li>\n<li itemprop=\"recipeInstructions\">Couper \u00e0 ras de l\u2019\u00e9pine centrale pour s\u00e9parer les deux filets.<\/li>\n<li itemprop=\"recipeInstructions\">Coupez l&rsquo;exc\u00e9dent de la partie inf\u00e9rieure de l&rsquo;estomac de chaque filet.<\/li>\n<li itemprop=\"recipeInstructions\">Une fois les filets de maquereau pr\u00eats, les examiner et enlever les ar\u00eates.<\/li>\n<li itemprop=\"recipeInstructions\">Assaisonner les filets de maquereaux \u00e0 l&rsquo;int\u00e9rieur. R\u00e9server.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9plucher et \u00e9mincer les \u00e9chalotes (ou l\u2019ognon).<\/li>\n<li itemprop=\"recipeInstructions\">M\u00e9langer les deux moutardes dans un petit ramequin.<\/li>\n<li itemprop=\"recipeInstructions\">Pr\u00e9chauffer le four \u00e0 170 \u00b0C<\/li>\n<li itemprop=\"recipeInstructions\">Pr\u00e9parer les papillotes de maquereau<\/li>\n<li itemprop=\"recipeInstructions\">Disposer un morceau de papier sulfuris\u00e9 sur votre plan de travail et placer au centre une couche d&rsquo;\u00e9chalote (ou ognon) \u00e9minc\u00e9e, assez grande pour recevoir un filet.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9taler un peu du m\u00e9lange de moutardes sur l\u2019\u00e9chalote et placer un filet de maquereau dessus.<\/li>\n<li itemprop=\"recipeInstructions\">Ajouter un filet d&rsquo;huile d\u2019olive extra vierge, un petit trait de vin blanc et saupoudrer de feuilles de thym.<\/li>\n<li itemprop=\"recipeInstructions\">Placez un autre filet dessus, badigeonner avec un peu plus de moutarde et finir avec un dernier filet d&rsquo;huile, une demi tranche de citron ou quelques gouttes de jus et un ou deux brins de thym.<\/li>\n<li itemprop=\"recipeInstructions\">Former le papillote. Pour cela, plier le papier sulfuris\u00e9 pour envelopper les filets sans trop serrer, mais en veillant \u00e0 que les bords restent bien ferm\u00e9s.<\/li>\n<li itemprop=\"recipeInstructions\">R\u00e9p\u00e9tez les \u00e9tapes ci-dessus jusqu&rsquo;\u00e0 former les 4 papillotes de maquereau.<\/li>\n<li itemprop=\"recipeInstructions\">Disposer les papillotes de maquereau sur la plaque du four et enfourner pendant 6 \u00e0 7 minutes environ.<\/li>\n<li itemprop=\"recipeInstructions\">Sortir les papillotes du four et les laisser reposer quelques minutes.<\/li>\n<li itemprop=\"recipeInstructions\">Et voil\u00e0 ! C\u2019est pr\u00eat ! Servir aussit\u00f4t.
