Et pour cette f\u00eate, dans mon pays, l&rsquo;Espagne, il y a pas mal de petits g\u00e2teaux. Expos\u00e9s dans les vitrines des boulangeries, parmi ces mets sucr\u00e9s on trouve les os de saint, les beignets de vent ou les panellets. Ces derniers ce sont des sp\u00e9cialit\u00e9s catalanes. G\u00e9n\u00e9ralement des petits g\u00e2teaux \u00e0 la p\u00e2te d\u2019amandes ou qui existent en plusieurs d\u00e9clinaisons. Aujourd\u2019hui je vous propose la recette des <strong>panellets \u00e0 la noix de coco<\/strong>.<\/p>\n<p>Avec les vacances, pr\u00e9parer un gros lot de panellets \u00ab maison \u00bb est une bonne id\u00e9e pour passer un apr\u00e8s-midi en famille et occuper les enfants (si c\u2019est le cas). Ils ou elles peuvent peut aider dans la recette pour p\u00e9trir et fa\u00e7onner la p\u00e2te d\u2019amande.<\/p>\n<p>\u00c0 partir de cette p\u00e2te d\u2019amande, on peut pr\u00e9parer les panellets classiques aux pignons de pin, mais avec un petit tour de main on l\u2019adapte pour en faire d\u2019autres, comme les panellets \u00e0 la noix de coco. Cuire pendant 3 minutes ou jusqu\u2019\u00e0 ce que la pomme de terre soit tendre.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9plucher la pomme de terre en la tenant avec un linge de cuisine propre pour \u00e9viter de se bruler.<\/li>\n<li itemprop=\"recipeInstructions\">Passer les pommes la terre au un moulin \u00e0 l\u00e9gumes. Ou l\u2019\u00e9craser avec une fourchette ou un presse-pur\u00e9e pour obtenir une pur\u00e9e le plus fine possible.<\/li>\n<li itemprop=\"recipeInstructions\">Laver le citron, le s\u00e9cher et r\u00e2per le zeste, en faisant attention \u00e0 ne pas prendre la partie blanche, car \u00e7a donne un gout amer.<\/li>\n<li itemprop=\"recipeInstructions\">Dans un bol, r\u00e9unir la pur\u00e9e de pommes de terre, le sucre glace et le zeste de citron. P\u00e9trir pour int\u00e9grer le tout, puis incorporer peu \u00e0 peu les amandes en poudre et enfin, la noix de coco r\u00e2p\u00e9e. On doit obtenir une p\u00e2te homog\u00e8ne.<\/li>\n<li itemprop=\"recipeInstructions\">Envelopper la p\u00e2te dans du film plastique et la laisser reposer au r\u00e9frig\u00e9rateur au moins 3 heures.<\/li>\n<li itemprop=\"recipeInstructions\">Une fois la p\u00e2te repos\u00e9e, faire pr\u00e9chauffer le four \u00e0 170 \u00b0C et pr\u00e9parer le plateau du four avec une feuille de papier sulfuris\u00e9.<\/li>\n<li itemprop=\"recipeInstructions\">Sortir la p\u00e2te du r\u00e9frig\u00e9rateur, retirer le film plastique et la diviser en morceaux d\u2019environ 15 \u00e0 20 grammes. Leur donner une forme de petite montagne comme sur la photo.<\/li>\n<li itemprop=\"recipeInstructions\">Badigeonner chaque panellets de jaune d\u2019\u0153uf battu et les recouvrir de noix de coco r\u00e2p\u00e9e (comme si c\u2019\u00e9tait pan\u00e9 dans la chapelure).<\/li>\n<li itemprop=\"recipeInstructions\">Cuire au four \u00e0 mi-hauteur environ 10 minutes ou jusqu\u2019\u00e0 ce que la pointe de la montagne acqui\u00e8re une jolie coloration dor\u00e9e.<\/li>\n<li itemprop=\"recipeInstructions\">Retirer du four et laisser refroidir.<\/li>\n<li itemprop=\"recipeInstructions\">Et voil\u00e0 ! C\u2019est pr\u00eat ! Dans ce dernier cas, un ou deux blancs d\u2019\u0153ufs seront n\u00e9cessaires pour lier la p\u00e2te, ou un peu d\u2019eau.<\/li>\n<li>La pr\u00e9paration des panellets \u00e0 la noix de coco utilise la m\u00eame p\u00e2te que pour les panellets aux pignons de pin ou aux amandes. On peut donc diviser la p\u00e2te pour faire un assortiment en adaptant proportionnellement les quantit\u00e9s de noix de coco r\u00e2p\u00e9e.<\/li>\n<li>Au lieu de petites montagnes, on peut donner forme de boule et une fois cuites et froides, on les nappe de chocolat fondu.
