Sa principale caract\u00e9ristique est qu&rsquo;il ne n\u00e9cessite pas de la levure, ce n\u2019est pas donc n\u00e9cessaire d&rsquo;atteindre que la p\u00e2te fermente. Et comment le pain gonfle-t-il ? Le secret est de remplacer la levure par du <strong>bicarbonate de soude<\/strong> et un ingr\u00e9dient acide. Normalement on utilise le buttermilk, c\u2019est-\u00e0-dire, un babeurre ou lait de baratte, mais du lait avec un peu de citron fait l\u2019affaire. De plus, c\u2019est un pain qui ne n\u00e9cessite presque aucun p\u00e9trissage, donc facile et rapide \u00e0 faire.
