Les samedis chez ma grand-m\u00e8re quand il avait des cannellonis et du <strong>poulet \u00e0 la broche<\/strong> accompagn\u00e9 de frites. Normalement, on allait acheter le poulet r\u00f4ti tout cuits \u00e0 la r\u00f4tisserie pr\u00e9f\u00e9r\u00e9e de ma m\u00e8re. \u00c7a m\u2019amusait de les voir tourner tous ensemble dans la r\u00f4tissoire (comme <a href=\"https:\/\/youtu.be\/Fou96gVmXFY?t=1m32s\">ici<\/a>). On ne le rate jamais et il reste toujours bien juteux. On le laisse tourner le poulet r\u00f4ti tout seul jusqu\u2019\u00e0 ce qu\u2019il soit dor\u00e9. Pas besoin de l\u2019arroser avec du bouillon. Il le fait lui m\u00eame en tournant avec son propre jus. Retirer les plus grosses avec des pinces et br\u00fbler les petites sur le feu d\u2019une cuisini\u00e8re \u00e0 gaz ou avec un petit chalumeau de cuisine.<\/li>\n<li itemprop=\"recipeInstructions\">Saler et poivrer le poulet g\u00e9n\u00e9reusement \u00e0 l\u2019int\u00e9rieur et \u00e0 l\u2019ext\u00e9rieur.<\/li>\n<li itemprop=\"recipeInstructions\">Introduire les rondelles de citron dans le poulet.<\/li>\n<li itemprop=\"recipeInstructions\">Badigeonner l\u2019ext\u00e9rieur du poulet avec de l\u2019huile d\u2019olive.<\/li>\n<li itemprop=\"recipeInstructions\">Embrocher le poulet.<\/li>\n<li itemprop=\"recipeInstructions\">Enfourner pendant 30 minutes en position grill et rotation. Selon le four, il faut laisser la porte entrouverte pour que la temp\u00e9rature ne monte pas trop.<\/li>\n<li itemprop=\"recipeInstructions\">Placer un grand plat \u00e0 gratin en bas du four avec un peu d\u2019eau pour recueillir la graisse. \u00c7a permet d\u2019\u00e9viter tacher le four et de faire une sauce pour servir avec le poulet.<\/li>\n<li itemprop=\"recipeInstructions\">Apr\u00e8s une demi-heure, \u00e9teindre le four et r\u00e9server le poulet \u00e0 l\u2019int\u00e9rieur quelques minutes.<\/li>\n<li itemprop=\"recipeInstructions\">Pendant que le poulet tourne dans le four, on pr\u00e9pare les frites maison.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9plucher les pommes de terre et les couper en b\u00e2tonnets.<\/li>\n<li itemprop=\"recipeInstructions\">Laver les frites trois fois pour \u00e9liminer l\u2019amidon.<\/li>\n<li itemprop=\"recipeInstructions\">Les \u00e9goutter et bien les s\u00e9cher avec un linge propre.<\/li>\n<li itemprop=\"recipeInstructions\">Faire chauffer une abondante quantit\u00e9 d\u2019huile dans une grande po\u00eale ou dans la friteuse \u00e0 150 \u00b0C.<\/li>\n<li itemprop=\"recipeInstructions\">Lorsque l\u2019huile est chaude, faire frire la moiti\u00e9 des frites pendant 8 minutes. \u00c9goutter et laisser refroidir.<\/li>\n<li itemprop=\"recipeInstructions\">Faire frire le reste des frites \u00e9galement pendant 8 minutes. \u00c9goutter et laisser refroidir.<\/li>\n<li itemprop=\"recipeInstructions\">Quand le poulet est pr\u00eat \u00e0 servir, faire chauffer l\u2019huile \u00e0 nouveau cette fois \u00e0 170 \u00b0C et quand l\u2019huile est chaude, faire dorer les frites de 3 \u00e0 4 minutes pour qu\u2019elles deviennent bien croustillantes.<\/li>\n<li itemprop=\"recipeInstructions\">Les \u00e9goutter et les laisser reposer un petit moment sur du papier absorbant pour enlever l\u2019exc\u00e8dent d\u2019huile. Servir le <strong>poulet \u00e0 la broche<\/strong> coup\u00e9 en morceaux et accompagn\u00e9 des frites et de la sauce r\u00e9cup\u00e9r\u00e9 dans le plat \u00e0 gratin.
