Elle est originaire de la r\u00e9gion de Florence et on l\u2019appelle aussi la <em>panmolle<\/em>.<\/p>\n<p>Pour faire une <em>panzanella<\/em> il faut trouver un bon pain de campagne, bien que la recette de cette salade utilise du pain toscan. Un pain italien \u00e0 mie ferme et assez souvent sans sel. L\u2019autre ingr\u00e9dient important est la tomate. Comme pour presque toutes les autres recettes \u00e0 base de tomates que j\u2019ai d\u00e9j\u00e0 publi\u00e9es sur le blog, je r\u00e9p\u00e8te\u00a0: il faut investir dans de bonnes tomates, parfum\u00e9es et pleines de go\u00fbt. Pour le reste, il suffit de m\u00e9langer tous les ingr\u00e9dients comme pour toutes les salades. La <em>panzanella<\/em> c\u2019est difficile \u00e0 rater. Le placer dans un bol et y ajouter un peu de vinaigre. Bien m\u00e9langer et laisser mac\u00e9rer un bon quart d\u2019heure. (**)<\/li>\n<li itemprop=\"recipeInstructions\">Enlever la cro\u00fbte du pain et faire ramollir\u00a0la mie en la mouillant avec\u00a0de l\u2019eau froide. Il ne faut pas trop la mouiller, elle doit rester humide, mais toujours ferme.<\/li>\n<li itemprop=\"recipeInstructions\">Laver les tomates, enlever leur p\u00e9doncule et les couper en d\u00e9s.<\/li>\n<li itemprop=\"recipeInstructions\">Bien laver le concombre, le fendre en deux dans le sens de la longueur, puis le couper en fines rondelles (pas plus d\u2019un demi-centim\u00e8tre d\u2019\u00e9paisseur).<\/li>\n<li itemprop=\"recipeInstructions\">Laver le basilic et s\u00e9parer les feuilles des tiges. Couper les grandes feuilles en quelques morceaux et laisser les petites enti\u00e8res. \u00c9ventuellement, garder quelques feuilles de basilic pour la d\u00e9coration.<\/li>\n<li itemprop=\"recipeInstructions\">Dans un grand saladier, \u00e9mietter grossi\u00e8rement le pain. Puis, incorporer les d\u00e9s de tomate, les rondelles de concombre, l\u2019oignon et le basilic.<\/li>\n<li itemprop=\"recipeInstructions\">Faire une vinaigrette avec 8\u00a0cuiller\u00e9es \u00e0 soupe d\u2019huile d\u2019olive, 2 ou 3 cuiller\u00e9es \u00e0 soupe de vinaigre, 1\/2 cuiller\u00e9e \u00e0 caf\u00e9 du sel et du poivre noir fra\u00eechement moulu. Introduire tous les ingr\u00e9dients dans un bocal, bien\u00a0fermer et secouer pour faire une \u00e9mulsion.<\/li>\n<li itemprop=\"recipeInstructions\">M\u00e9langer la salade avec la vinaigrette.<\/li>\n<li itemprop=\"recipeInstructions\">Couvrir le saladier avec du film plastique et laisser la <em>panzanella<\/em> mac\u00e9rer dans le r\u00e9frig\u00e9rateur au moins 1 heure.<\/li>\n<li itemprop=\"recipeInstructions\">Et voil\u00e0, c\u2019est pr\u00eat\u00a0! Si vous avez une boulangerie italienne \u00e0 c\u00f4t\u00e9 de vous, n\u2019h\u00e9sitez pas \u00e0 l\u2019essayer.
