Laver le c\u00e9leri et le couper en petits morceaux.<\/li>\n<li itemprop=\"recipeInstructions\">Enlever la graisse de la viande. Couper la en morceaux et les s\u00e9cher avec du papier absorbant. Saler et le poivrer.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9plucher l&rsquo;ail et l\u2019\u00e9craser au mortier.<\/li>\n<li itemprop=\"recipeInstructions\">Peler les tomates, enlever le p\u00e9doncule, les couper en deux et enlever les graines.<\/li>\n<li itemprop=\"recipeInstructions\">Broyer les tomates au mixer et tamiser avec une passoire fine.<\/li>\n<li itemprop=\"recipeInstructions\">Dans une cocotte, faire chauffer l&rsquo;huile d&rsquo;olive \u00e0 feu moyen-\u00e9lev\u00e9.<\/li>\n<li itemprop=\"recipeInstructions\">Lorsque l&rsquo;huile est chaude, ajouter les morceaux de b\u0153uf et faire dorer de chaque c\u00f4t\u00e9. R\u00e9server. Laisser l&rsquo;huile dans la po\u00eale.<\/li>\n<li itemprop=\"recipeInstructions\">Ajouter l&rsquo;oignon et \u00e9ventuellement le c\u00e9leri et le piment de Cayenne \u00e9cras\u00e9. Faire revenir \u00e0 feu moyen 5 minutes environ. Remuer de temps en temps.<\/li>\n<li itemprop=\"recipeInstructions\">Une fois les oignons sont translucides, ajouter l&rsquo;ail et la tomate. Laissez r\u00e9duire la tomate.<\/li>\n<li itemprop=\"recipeInstructions\">Lorsque la tomate a r\u00e9duit, remettre la viande dans la cocotte et mouiller avec la Guinness et le bouillon de b\u0153uf. Remuer un peu et ajouter une branche de thym frais ou une pinc\u00e9e de thym sec.<\/li>\n<li itemprop=\"recipeInstructions\">Couvrir et faire mijoter \u00e0 feu doux environ 1 \u00bd heure. Remuer de temps en temps.<\/li>\n<li itemprop=\"recipeInstructions\">Pendant ce temps, \u00e9plucher les carottes, les pommes de terre, le panais et le navet. Couper le tout en morceaux.<\/li>\n<li itemprop=\"recipeInstructions\">Apr\u00e8s la premi\u00e8re cuisson, ajouter les l\u00e9gumes et remuer. Laissez mijoter \u00e0 d\u00e9couvert pendant 1 heure ou jusqu&rsquo;\u00e0 ce que la viande et les l\u00e9gumes soient tendres selon votre go\u00fbt.<\/li>\n<li itemprop=\"recipeInstructions\">Enfin, si vous voulez \u00e9paissir la sauce, ajouter la f\u00e9cule de ma\u00efs dissoute dans deux ou trois cuill\u00e8res \u00e0 soupe d&rsquo;eau froide.
