R\u00e2per le\u00a0zeste en faisant attention de ne pas\u00a0\u00a0r\u00e2per\u00a0la partie blanche pour \u00e9viter le go\u00fbt trop amer. R\u00e9server.<\/li>\n<li itemprop=\"recipeInstructions\">Hacher le chocolat noir et faire fonde\u00a0au\u00a0bain-marie ou au micro-ondes.\n<ul>\n<li itemprop=\"recipeInstructions\">Pour faire fondre au bain-marie, placer une casserole\u00a0avec de l&rsquo;eau et une plus petite\u00a0\u00e0 l&rsquo;int\u00e9rieur (ou un ustensile \u00e0 bain-marie). L&rsquo;eau ne doit pas \u00eatre en contacte\u00a0avec le petit r\u00e9cipient. Faire chauffer l&rsquo;eau sans la laisser bouillir. Ajouter le chocolat et remuer\u00a0soigneusement jusqu&rsquo;\u00e0 ce qu&rsquo;il fonde.<\/li>\n<li itemprop=\"recipeInstructions\">Pour faire fondre au micro-ondes, placer le chocolat dans un bol,\u00a0faire chauffer \u00e0 basse temp\u00e9rature 30 secondes, le sortir et remuer. R\u00e9p\u00e9ter le processus jusqu&rsquo;\u00e0 ce qu&rsquo;il soit compl\u00e8tement fondu. C&rsquo;est tr\u00e8s important de garder la\u00a0basse temp\u00e9rature et de le faire en \u00e9tapes de 30 secondes, sinon on risque de br\u00fbler le\u00a0chocolat.<\/li>\n<\/ul>\n<\/li>\n<li itemprop=\"recipeInstructions\">Une fois le chocolat fondu, laisser ti\u00e9dir.<\/li>\n<li itemprop=\"recipeInstructions\">S\u00e9parer les jaunes d&rsquo;\u0153ufs\u00a0des blancs.<\/li>\n<li itemprop=\"recipeInstructions\">Monter les blancs en neige avec une pinc\u00e9e de sel. On peut le\u00a0faire \u00e0 la main, avec un batteur \u00e9lectrique ou avec un\u00a0robot culinaire.<\/li>\n<li itemprop=\"recipeInstructions\">Dans un grand bol, m\u00e9langer les \u0153ufs avec le sucre glace et le zeste d&rsquo;orange.<\/li>\n<li itemprop=\"recipeInstructions\">Verser la moiti\u00e9 du chocolat noir sur les \u0153ufs et bien m\u00e9langer. Int\u00e9grer l&rsquo;autre moiti\u00e9.<\/li>\n<li itemprop=\"recipeInstructions\">Ajouter les blancs d\u2019\u0153uf en trois fois. M\u00e9langer doucement chaque tiers avec le chocolat en utilisant une spatule\u00a0en silicone et en faisant des mouvements\u00a0d&rsquo;haut en bas. Attention \u00e0 ne pas faire des mouvements rapides et brusques qui enl\u00e8vent\u00a0l&rsquo;air du\u00a0m\u00e9lange.<\/li>\n<li itemprop=\"recipeInstructions\">Lorsque l&rsquo;on obtient\u00a0un m\u00e9lange homog\u00e8ne, verser\u00a0dans des verrines ou ramequins\u00a0individuels et laisser reposer au r\u00e9frig\u00e9rateur au moins 2 heures couverts avec du film plastique.<\/li>\n<li itemprop=\"recipeInstructions\">C&rsquo;est pr\u00eat. On ajoute ces parfums\u00a0au chocolat fondu. N\u00e9anmoins, je pr\u00e9f\u00e8re la recette que je\u00a0d\u00e9cris, pour\u00a0ne pas me perdre dans d&rsquo;autres ar\u00f4mes secondaires.<\/li>\n<li>Utilisez de l&rsquo;orange confite pour d\u00e9corer et \/ ou un peu de <a title=\"Comment preparer la cr\u00e8me Chantilly\" href=\"http:\/\/jesuisuncuisinier.fr\/fr\/2014\/11\/creme-chantilly.html\">cr\u00e8me Chantilly<\/a>.<\/li>\n<li>Je pr\u00e9f\u00e8re faire fondre le chocolat au bain-marie pour ne pas risquer de le br\u00fbler au micro-ondes. J&rsquo;utilise un outil\u00a0\u00e0 bain-marie\u00a0que je trouve\u00a0tr\u00e8s pratique.<\/li>\n<li>Pour monter les blancs en neige facilement, les \u0153ufs doivent \u00eatre \u00e0 temp\u00e9rature ambiante.
