Cependant, la particularit\u00e9 de ce plat de <em>penne<\/em> est qu\u2019on le fait avec des ingr\u00e9dients plus accessibles hors de Sicile. Si vous trouvez\u00a0de la\u00a0ricotta sal\u00e9e, je vous recommande de pr\u00e9parer un grand plat de p\u00e2tes <em>alla norma<\/em>. Sinon, vous pouvez toujours vous r\u00e9galer avec cette version des <em>pennes<\/em>\u00a0\u00e0 la tomate, aubergine et mozzarella. Cette derni\u00e8re est\u00a0ajout\u00e9e \u00e0 la fin de la pr\u00e9paration, ce qui va la faire fondre\u00a0et faire de ce plat un v\u00e9ritable d\u00e9lice. Quand elle est chaude, ajouter les d\u00e9s de tomates, saupoudrer d\u2019une cuill\u00e8re \u00e0 caf\u00e9 de sucre et ajouter des grandes feuilles de basilic. Laisser r\u00e9duire pendant une bonne demi-heure.<\/li>\n<li itemprop=\"recipeInstructions\">Retirer les feuilles de basilic et tamiser \u00e0 l\u2019aide d\u2019un passe-pur\u00e9e \u00e0 manivelle.<\/li>\n<li itemprop=\"recipeInstructions\">Replacer la sauce dans la po\u00eale, saler et poivrer\u00a0et ajouter des feuilles de basilic hach\u00e9es.<\/li>\n<li itemprop=\"recipeInstructions\">Laisser r\u00e9duire pendant quelques minutes et r\u00e9server.<\/li>\n<\/ol>\n<\/li>\n<li itemprop=\"recipeInstructions\">Faire chauffer\u00a0sur feu moyen beaucoup d\u2019huile d\u2019olive dans une po\u00eale.<\/li>\n<li itemprop=\"recipeInstructions\">S\u00e9cher les morceaux d\u2019aubergines. Faire dorer\u00a0dans l\u2019huile bien chaude et laisser reposer sur du papier absorbant.<\/li>\n<li itemprop=\"recipeInstructions\">Couper la mozzarella en cubes de 1\u00a0cm de c\u00f4t\u00e9.<\/li>\n<li itemprop=\"recipeInstructions\">Dans une grande casserole, faire chauffer de 3 \u00e0 4 litres d\u2019eau.<\/li>\n<li itemprop=\"recipeInstructions\">Porter \u00e0 \u00e9bullition, d\u00e8s qu\u2019elle bout, ajouter une bonne cuill\u00e8re \u00e0 soupe de sel et quand elle revient \u00e0 \u00e9bullition, ajouter les p\u00e2tes et remuer un peu pour \u00e9viter qu\u2019elles se collent entre elles.<\/li>\n<li itemprop=\"recipeInstructions\">Faire cuire les p\u00e2tes <em>al dente<\/em>, le temps indiqu\u00e9 par le fabricant.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9goutter et r\u00e9server un peu de jus de cuisson.<\/li>\n<li itemprop=\"recipeInstructions\">Si n\u00e9cessaire, r\u00e9chauffer la sauce tomate. Quand elle est chaude, m\u00e9langer avec les p\u00e2tes, aubergine et un trait\u00a0du jus de cuisson.<\/li>\n<li itemprop=\"recipeInstructions\">Enfin, ajouter les cubes de mozzarella et remuer doucement jusqu\u2019\u00e0 ce qu\u2019ils commencent \u00e0 fondre.<\/li>\n<li itemprop=\"recipeInstructions\">C\u2019est pr\u00eat.
