Les aubergines sont frites et servis avec le\u00a0salmorejo \u00e0 cot\u00e9. Celui-ci est un sorte de gaspacho, \u00e0 base de pain et de tomates plus \u00e9pais que le gaspacho andalou. Normalement on\u00a0trempe l&rsquo;aubergine dans le dans le salmorejo, ou on le tartine avec\u00a0une petit cuill\u00e8re. C&rsquo;est super bon ! Je me souviens que le\u00a0premier \u00e9t\u00e9 o\u00f9 je suis retourn\u00e9 \u00e0 Madrid depuis que je l&rsquo;ai quitt\u00e9 pour\u00a0d\u00e9m\u00e9nager\u00a0\u00e0 Grenoble, je suis sorti\u00a0avec des amis pour essayer un nouveau restaurant \u00e0 tapas. Vous savez, ces moments o\u00f9 on regarde la carte\u00a0et on sait tout de suite ce que l&rsquo;on va commander\u00a0? Ou plut\u00f4t&#8230; ce que l&rsquo;on a\u00a0\u00abbesoin\u00bb de commander. C&rsquo;est ce qui m&rsquo;est arriv\u00e9 ce jour-l\u00e0 avec les\u00a0aubergines au salmorejo. Couper-la en rondelles\u00a0d&rsquo;un\u00a0demi centim\u00e8tre\u00a0d&rsquo;\u00e9paisseur.<\/li>\n<li itemprop=\"recipeInstructions\">Saler\u00a0les rondelles\u00a0et laissez-les reposer sur une passoire pendant une demi-heure. Cette \u00e9tape permet \u00e0 l&rsquo;aubergine de perdre\u00a0son go\u00fbt amer.<\/li>\n<li itemprop=\"recipeInstructions\">Ensuite,\u00a0rincer les rondelles, \u00e9goutter, passer dans un bol et faire\u00a0mac\u00e9rer\u00a0avec de la bi\u00e8re pendant une bonne demi-heure.
