L&rsquo;aubergine est pr\u00e9sent\u00e9 assez souvent en forme de frite, mais c&rsquo;est \u00e9galement r\u00e9pandu en rondelles. C&rsquo;est presque la seule pr\u00e9paration dans la quelle j&rsquo;utilise la m\u00e9lasse, mais j&rsquo;aime bien. J&rsquo;ai commenc\u00e9 par\u00a0Cadix et j&rsquo;ai fini au\u00a0Cap de Gate. Je vous recommande de le faire, j&rsquo;ai de bons souvenirs de cette d\u00e9couverte de l&rsquo;Andalousie, pas que des souvenirs gastronomiques \ud83d\ude09<\/p>\n<p>Voici la recette. Pas besoin d&rsquo;\u00eatre trop pr\u00e9cis. Ensuite, couper chaque tranche\u00a0en b\u00e2tonnets de 1 cm d&rsquo;\u00e9paisseur.<\/li>\n<li itemprop=\"recipeInstructions\">Saler bien\u00a0tous les b\u00e2tonnets et laisser reposer environ 30 minutes sur une passoire. Cette \u00e9tape fait que l&rsquo;aubergine perds son amertume.<\/li>\n<li itemprop=\"recipeInstructions\">Rincer les b\u00e2tonnets et les mettre dans un grand bol. Couvrir\u00a0avec de la bi\u00e8re et laisser reposer environ 30 minutes \u00e0 nouveau. Cette \u00e9tape permettra\u00a0que\u00a0l&rsquo;aubergine n&rsquo;absorbe pas trop d&rsquo;huile pendant la friture.<\/li>\n<li itemprop=\"recipeInstructions\">S\u00e9cher soigneusement les b\u00e2tonnets et fariner\u00a0l\u00e9g\u00e8rement. Vous pouvez donner quelques petits coups aux b\u00e2tonnets pour enlever\u00a0l&rsquo;exc\u00e9dent de farine.<\/li>\n<li itemprop=\"recipeInstructions\">Faire chauffer de l&rsquo;huile d&rsquo;olive dans une grand po\u00eale \u00e0 feu for ou dans la friteuse \u00e0 170 \u00baC.<\/li>\n<li itemprop=\"recipeInstructions\">Lorsque l&rsquo;huile est chaude, faire frire les b\u00e2tonnets d&rsquo;aubergine jusqu&rsquo;\u00e0 ce que ils soient dor\u00e9s. Ne pas faire frire\u00a0trop de b\u00e2tonnets \u00e0 la fois, \u00e7a\u00a0va refroidir l&rsquo;huile, la friture va prendre plus de temps et les b\u00e2tonnets vont absorber plus d&rsquo;huile. Il faut mieux les faire frire en plusieurs\u00a0fois, en fonction de la taille de la po\u00eale et de l&rsquo;aubergine.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9goutter sur du papier absorbant un petit moment et les transf\u00e9rer dans le\u00a0plat pour\u00a0servir.<\/li>\n<li itemprop=\"recipeInstructions\">Juste avant manger, ajouter un petit trait\u00a0de m\u00e9lasse par dessus avec une petite cuill\u00e8re.<\/li>\n<li itemprop=\"recipeInstructions\">C&rsquo;est pr\u00eat.
