Elles\u00a0sont \u00e9normes et ont un parfum tr\u00e8s fort. Autant que, normalement j&rsquo;en utilise seulement la moiti\u00e9\u00a0pour ma recette. Il n&rsquo;y a pas de myst\u00e8re, il suffit de battre pour obtenir une cr\u00e8me bien lisse. Ajouter les grains, la gousse de vanille vide et la moiti\u00e9 du sucre au lait.<\/li>\n<li itemprop=\"recipeInstructions\">Monter\u00a0un peu le\u00a0feu et porter le lait \u00e0\u00a0\u00e9bullition, en remuant de temps en temps\u00a0pour \u00e9viter qu&rsquo;il ne br\u00fble\u00a0au fond.<\/li>\n<li itemprop=\"recipeInstructions\">Dans un grand bol, battre les jaunes d\u2019\u0153ufs avec le sucre restant jusqu&rsquo;\u00e0 ce que le m\u00e9lange blanchisse.<\/li>\n<li itemprop=\"recipeInstructions\">Saupoudrer la f\u00e9cule de ma\u00efs progressivement tout en m\u00e9langeant vigoureusement. Continuer \u00e0\u00a0battre jusqu&rsquo;\u00e0 ce qu&rsquo;on obtienne une consistance lisse.<\/li>\n<li itemprop=\"recipeInstructions\">Lorsque le lait commence \u00e0 bouillir, passer\u00a0\u00e0 l&rsquo;\u00e9cumoire pour enlever la gousse de vanille et d&rsquo;\u00e9ventuels restes qu&rsquo;on a pu gratter.<\/li>\n<li itemprop=\"recipeInstructions\">Verser lentement le lait sur le m\u00e9lange d\u2019\u0153ufs en remuant \u00e9nergiquement.<\/li>\n<li itemprop=\"recipeInstructions\">Remettre l&rsquo;appareil\u00a0dans la casserole, en passant encore \u00e0 l&rsquo;\u00e9cumoire pour enlever\u00a0d&rsquo;\u00e9ventuels traces d&rsquo;\u0153uf caill\u00e9. Porter \u00e0 \u00e9bullition \u00e0 feu moyen, en remuant constamment.<\/li>\n<li itemprop=\"recipeInstructions\">D\u00e8s l&rsquo;\u00e9bullition, retirer du feu et remettre\u00a0\u00e0\u00a0nouveau dans le bol. Laisser ti\u00e9dir\u00a0(\u00e0 50\u00b0C).<\/li>\n<li itemprop=\"recipeInstructions\">Lorsque la cr\u00e8me est ti\u00e8de (elle doit \u00eatre chaude mais sans br\u00fbler), ajouter le beurre ramolli et bien m\u00e9langer\u00a0au fouet.
