Les ravioles du Dauphin\u00e9, comme on les appelle, ce sont des minis raviolis fabriqu\u00e9s dans la ville de Romans et ses alentours\u00a0depuis des si\u00e8cles. C&rsquo;est comme une p\u00e2te\u00a0italienne, mais un peu plus \u00e9lastique et avec un garniture \u00e0 base de fromage frais, de comt\u00e9 et du persil. La recette traditionnelle telle qu&rsquo;elle est connue aujourd&rsquo;hui date des d\u00e9buts du XIXe si\u00e8cle, mais a \u00e9t\u00e9 popularis\u00e9e plus tard lorsque une vieille dame (la M\u00e8re Maury)\u00a0a commenc\u00e9 \u00e0 servir dans son restaurant ses ravioles \u00ab\u00a0fait-maison\u00a0\u00bb.<\/p>\n<p>Elles sont devenu si populaires que dans\u00a0la ville de Romans, m\u00eame aujourd\u2019hui, on peut toujours trouver des dames (surtout) qui font l&rsquo;\u00e9laboration artisanale de cette p\u00e2te Dauphinoise, les ravioleuses, et qui commercialisent sur le march\u00e9s laitiers leur production fra\u00eechement pr\u00e9par\u00e9e. \u00c9videmment, il y a aussi des entreprises de fabrication industrielle.<\/p>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><ins class=\"adsbygoogle\"style=\"display:block\"data-ad-client=\"ca-pub-7750789452383743\"data-ad-slot=\"9252856116\"data-ad-format=\"auto\"><\/ins><script>(adsbygoogle = window.adsbygoogle || []).push({});<\/script><amp-ad width=\"100vw\" height=320 type=\"adsense\" data-ad-client=\"ca-pub-7750789452383743\" data-ad-slot=\"7340373828\" data-auto-format=\"rspv\" data-full-width><div overflow><\/div><\/amp-ad><div class=\"cleaner\" style=\"margin: 10px\"><\/div><\/p>\n<h2>Voulez-vous savoir comment faire des ravioles du Dauphin\u00e9 ?<\/h2>\n<p>Pour r\u00e9aliser cette recette \u00e0 la maison, je conseille de se servir d&rsquo;une plaque \u00e0 mini ravioli (ou raviolini), parce qu&rsquo;ils sont si petits que leur \u00e9laboration devient un sacre boulot. \u00a0Sinon, regardez <a href=\"http:\/\/galanthe.skyrock.com\/3189219693-Les-ravioleuses-d-Eymeux.html\">ce reportage photo<\/a> sur la fabrication \u00e0 la main.<\/p>\n<p>En plus, \u00e0 Romans on utilise une farine tr\u00e8s fine, la T35, typique aussi\u00a0de la r\u00e9gion et difficile \u00e0 trouver en dehors. Mais, ne vous inqui\u00e9tez pas, heureusement, la farine courante, la T45 ou T55, convient parfaitement. Les ravioles sont g\u00e9n\u00e9ralement servis avec un peu de cr\u00e8me fra\u00eeche et emmental r\u00e2p\u00e9 selon le go\u00fbt. Juste comme \u00e7a elles sont excellentes, car leur garniture elle est d\u00e9j\u00e0 tr\u00e8s riche. Enfin, il faut \u00e9galement dire qu&rsquo;on peut trouver des ravioles garnies diff\u00e9remment. a petit avec une fourchette jusqu&rsquo;\u00e0 que la p\u00e2te se compacte.<\/li>\n<li itemprop=\"recipeInstructions\">P\u00e9trir la p\u00e2te sur le plan de travail farin\u00e9, jusqu&rsquo;\u00e0 qu&rsquo;elle soit bien lise et flexible.<\/li>\n<li itemprop=\"recipeInstructions\">Laisser reposer la p\u00e2te\u00a0dans un film plastique.<\/li>\n<li itemprop=\"recipeInstructions\">Faire fondre homog\u00e8ne.<\/li>\n<li itemprop=\"recipeInstructions\">\u00c9taler la p\u00e2te \u00e0 2 mm d&rsquo;\u00e9paisseur.<\/li>\n<li itemprop=\"recipeInstructions\">Couper la p\u00e2te en lamines \u00e0 la taille de la plaque \u00e0 mini ravioli.<\/li>\n<li itemprop=\"recipeInstructions\">Monter les mini ravioli:\n<ol>\n<li itemprop=\"recipeInstructions\">Mettre une lamine de p\u00e2te sur la plaque farin\u00e9e et faire les trous.<\/li>\n<li itemprop=\"recipeInstructions\">Remplir les trous avec la farce.<\/li>\n<li itemprop=\"recipeInstructions\">Coller dessus une autre lamine.<\/li>\n<li itemprop=\"recipeInstructions\">Passer le rouleau pour couper les ravioli et enlever les bords.<\/li>\n<li itemprop=\"recipeInstructions\">Couper une lamine de papier sulfuris\u00e9e de la m\u00eame taille que la plaque.<\/li>\n<li itemprop=\"recipeInstructions\">Mette dessus la lamine de papier, tourner et retirer la plaque.<\/li>\n<li itemprop=\"recipeInstructions\">Empiler soigneusement les diff\u00e9rentes lamines de\u00a0<em>ravioles<\/em>\u00a0d\u00e9j\u00e0 faites.<\/li>\n<\/ol>\n<\/li>\n<li itemprop=\"recipeInstructions\">Congeler les ravioles jusqu&rsquo;\u00e0 la p\u00e2te devient dure (de 30 min \u00e0 1 h).<\/li>\n<li itemprop=\"recipeInstructions\">Dans une grande faitout, faire bouillir le bouillon de volaille.<\/li>\n<li itemprop=\"recipeInstructions\">S\u00e9parer les ravioles soigneusement.<\/li>\n<li itemprop=\"recipeInstructions\">Faire cuire la moiti\u00e9 des ravioles \u00e0 bouillon doux pendant 1 min ou 1 min 30.<\/li>\n<li itemprop=\"recipeInstructions\">Dans un autre bol, placer un assiette a l&rsquo;inverse. \u00c7a sert \u00e0 \u00e9goutter les ravioles.\u00a0Ne jamais s&rsquo;en servir d&rsquo;une passoire car elle ab\u00eemera les ravioles.<\/li>\n<li itemprop=\"recipeInstructions\">Faire sortir les ravioles de l&rsquo;eau avec une \u00e9cumoire et les mettre dans le bol avec l&rsquo;assiette.<\/li>\n<li
